A roaster-run chain out of Omsk: 14 coffee shops in seven cities — Omsk, Moscow, St Petersburg, Nizhny Novgorod, Novosibirsk, Samara, Kazan. Two in-house roasteries, an online bean store, a blog and a podcast. This is the team that brought nitro coffee and air latte to Russia.
What we did
- 01Linked the two roasteries to the shops on one loop: a bean order is built from a shop’s actual consumption and roast date, not from a weekly quota.
- 02Tuned the 86 list for perishables: the milk range and seasonal drinks go out of stock on real remainders rather than a barista’s hunch.
- 03Merged retail and the online store into one guest profile — beans bought for home and the morning cappuccino are now one story, not two databases.
- 04Added a morning-peak forecast per shop: a Moscow shift and an Omsk shift start at different hours and under different load.
